Thermophile Type B, or Thermo B, is a blend of thermophilic lactic acid starters specifically used in the production of Italian-type cheeses, with a particular emphasis on mozzarella. It operates as a gradual acidifier, offering greater control over acid production when compared to TM81.

1 Dose - contains about 10 grams or approximately 5 tsp. 

 

Contains: Streptococcus salivarius subsp. thermophilus (formerly: Streptococcus thermophilus), Lactobacillus bulgaricus

Primary Applications: Italian cheeses: Mozzarella, Romano, Provolone, Asiago

Storage Conditions: Store in the freezer

Usage Info: 1/4 tsp. per 1-2 gallons milk
