MA 4001, commonly known as the "farmhouse culture," is an incredibly versatile mesophilic culture blend. It finds special application in the production of soft ripened or unripened specialty cheeses and can also be used for semi-hard cheeses like farmhouse cheddar. This unique blend encompasses standard mesophilic lactic acid cultures along with a thermophilic lactic acid culture (Streptococcus thermophilus). The inclusion of the thermophilic culture contributes to enhanced flavor and facilitates quicker acid production in the cheese-making process.
MA 4001 can be used as a direct substitute for MA 4002.
Contains: Lactococcus lactis subsp. lactis, Lactococcus cremoris subsp. cremoris (formerly: Lactococcus lactis subsp. cremoris), Lactococcus lactis subsp. biovar. diacetylactis, Streptococcus salivarius subsp. thermophilus (formerly: Streptococcus thermophilus), Sucrose, Maltodextrins
Primary Applications: Brie, Camembert, Gouda, Chevre and Blue cheeses; also may be used for semi-hard cheeses such as Farmhouse Cheddar.
Storage Conditions: Store in the freezer
Usage Info: 1/8 tsp. per up to 2 gallons of milk, 1/4 tsp. per 3-5 gallons of milk
