Lipase Powder 400 Kid/Lamb (goat/sheep) lipase is a powdered flavor enzyme used to create a traditional "peccorino" flavor profile in cheeses such as Romano, Provolone, Feta.
Contains: Pregastric kid and lamb lipase, salt, whey and/or whey protein concentrate, non-fat milk
Storage Conditions: Store in the freezer
Usage Info: We recommend individual experimentation when using lipase with your milk to achieve desired effect. A good starting point is a pinch to 1/8 tsp. of lipase per 2 gallons of milk, to be added at same time as culture.
