Flora Danica is a mesophilic culture blend specially used in crafting fresh and soft cheeses, sour cream, and cultured butter. It is a favored choice for a variety of cheeses, including goat-milk cheeses, Havarti, Baby Swiss, Gouda, Edam, Blue, Camembert, Brie, and more. This blend actively supports the production of diacetyl/CO2, imparting a buttery flavor similar to Aroma B.

Primary Applications: Chevre and other goat-milk cheeses, Havarti, Baby Swiss, Gouda, Edam, Blue, Camembert, Brie, etc. May also be used to make Sour Cream, Buttermilk, Creme Fraiche, Cultured Butter.
Storage Conditions: Store in the freezer
Usage Info: 1/4 tsp. per 2-4 gallons milk for soft, fresh cheeses. 1/2 tsp. per 2-4 gallons for semi-hard cheeses.
