Brevibacterium Linens 500 plays an important role in the maturation and flavor production of cheeses with washed rinds. The selected strain imparts a distinctive, dark reddish color to the cheese rind and has a major influence on the aroma and taste of smear ripenned cheeses. It has high aromatic potential and high proteolytic activity, and it prefers a more neutral pH for growth. Ideal growth temperature is between 68°F to 77°F.
Depending on application style and preferred usage rate, this 1-Dose packet will inoculate at least 40 batches of 1 to 3 gallon size; see basic usage rates below.

Usage Info: If spraying on (recommended), dilute by sprinkling one small pinch (less than 1/8 tsp.) in 4-8 oz. buffered water (8 oz. non-chlorinated water with 1/8 tsp. salt and 1/8 tsp. sugar). Allow 16 hours reactivation in buffered water at refrigeration temperatures before use. If inoculating milk directly, sprinkle a small pinch (less than 1/8 tsp.) into 2 gallons milk.
